Happy Healthy Mexican Recipes

Homemade Fresh Fish TacosMy first introduction (and love-at-first-bite) to fish tacos was Taco Boy in Folly Beach, SC, a few years ago. These tacos and several versions of homemade salsas and chips were a little taste of heaven. They were made to look like fishies on the plate — PERFECTION. That moment has set a standard that’s been impossible to match ever since. (Las Tortugas Deli Mexicana in Germantown, TN, comes close. Plus they use lots of locally sourced and organic meats and veggies. That gets an extra smiley face in my book.) BTW, this photo is not from Taco Boy, Las Tortugas, or the Mexican cafe in Santa Fe.

Of course, I chose fish tacos for my first meal in Santa Fe. They were quite tasty (and I was monstrously hungry), but they just didn’t match up with my memories from Taco Boy. Fish tacos are a fairly healthy fare on the Mexican menu. Many other choices loaded with lots of cheeses, etc. —  not so much. Note: Many Mexican dishes include corn. Remember much corn is GMO. You may wish to look for an organic variety.
