Monday, August 5, 2013 — the first day of the new school year here in Shelby County Tennessee! Yes, it is just the first full week in August, it’s still very hot, and it’s still Summer, and school is starting!
Footsteps in Eden Reflexology is dedicating this post to suggesting some great recipes for cool refreshment for you and for your children returning home at the end of a long hot day. We couldn’t think of a better ingredient than peppermint with its many cooling properties. (We won’t steal Connie’s thunder for later in the month by sharing those just now.) We are, however, sharing recipes that include peppermint. We’ve gathered these from around the worldwide web and have included the links for you to find them easily.
Peppermint Lemonade — wonderful liquid refreshment, and perhaps an interesting twist for the lemonade stand.
Chocolate Peppermint Meringues — chocolate is always a favorite and the lightness of the meringue with the touch of cooling peppermint will make a melt-in-the-mouth favorite. (Hint I learned from my Mom many years ago: Never make meringue cookies on a rainy day. It just doesn’t work!)
Refreshing Mint and Tuna Salad — just add fresh peppermint, parsley, and summer veggies to tuna. Voila! You have a cool summer entree. (In my kitchen I would, most likely, substitute salmon for the tuna.)
Minted Marinated Zuchinni — find the fixings at your local farmers’ market to enjoy this refreshing side dish.
Chocolate Mint Milkshake — enough said…who wouldn’t love one of these!
Chocolate Mint Mousse — nice cool dessert…and the sprinkles on top…one of my granddaughters believes sprinkles are the perfect topping for almost everything.
Mint-Truffle Ice Cream Terrine with Mint and Chocolate Sauces — ice cream is just about the coolest…you’ll have to check this one out for sure…the design in the ice cream is too awesome!
